Try to only get the actual sun dried tomatoes added to mixture and not too much extra oil! Roasted Eggplant Hummus 🍆 1 can garbanzo beans, drained & rinsed 🍆 1/2 cup lemon juice 🍆 1/3 cup tahini 🍆 1/2 tsp cumin 🍆 Pepper to taste 🍆 1 clove garlic 🍆 1 Eggplant, Roasted Combine ALL Ingredients in blender! Slice eggplant in half long ways. Roast at 425* for 20-25 minutes. Should be very soft! Let cool and use the inside of eggplant!
